Ingredients

  • 1 lb fresh pasta
  • 2 tsp garlic minced
  • 1/4 cup olive oil
  • 4 tbsp butter
  • 1/2 tsp crushed red pepper flakes
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 1/2 cup white wine
  • 1/2 cup fresh parsley chopped
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  • Bring a large pot of salted water to a boil and cook pasta according to package directions, 1 minute less than al dente. Reserve some pasta water before draining.
  • In a large saucepan, heat olive oil over medium heat.
  • Add garlic and crushed red pepper flakes. Sauté for about 1 minute, until fragrant.
  • Add salt, black pepper, white wine, and butter. Stir to combine and cook for about 2 minutes, allowing the sauce to come together.
  • Remove sauce from heat and toss with cooked pasta, adding reserved pasta water as needed to loosen the sauce.
  • Garnish with fresh parsley and grated Parmesan cheese before serving.

Notes

  • Goes great with light proteins like chicken or seafood.
  • Cooking the pasta slightly underdone and finishing it in the sauce enhances flavor and texture.
  • Serve immediately for best results.
