Mussels Al Diablo

Ingredients
  

  • 1 lb Fresh mussels cleaned and debearded
  • ¼ cup Olive oil
  • ¼ cup Chopped chorizo
  • ½ cup Chopped red onion
  • 3 each Garlic cloves minced
  • ¼ cup chopped fresh parsley
  • 1-2 each Bay Leaf
  • 14 oz can crushed tomatoes
  • 1 cup Red wine
  • 1 tsp red pepper flakes

Instructions
 

  • n a large pot, heat oil over med
  • Add chorizo and cook until crisp, 3-5 minutes
  • And chili flakes and cook for 30 seconds
  • Add onions and cook until translucent, 2-3 minutes
  • Add garlic, parsley, and bay leaves and cook 1 minute
  • Add tomatoes, wine and stir well and lower heat to light simmer
  • Add mussels, stir and cover until mussels are all cooked (when they all open), approx 7-9 minutes.
  • Remove any unopened (dead) mussels before serving

Notes

  • Serve with bread & herb dipping sauce’
  • Serve with salad with balsamic or red wine vinegarette
  • Chorizo can be swapped out with bacon or pancetta
  • Red onion can be swapped with shallots
