Ingredients

Fresh mussels
cleaned and debearded

cup
Olive oil

cup
Chopped chorizo
½
cup
Chopped red onion

Garlic cloves

chopped fresh parsley

Bay Leaf

can crushed tomatoes

Red wine

red pepper flakes
Instructions
n a large pot, heat oil over med
Add chorizo and cook until crisp, 3-5 minutes
And chili flakes and cook for 30 seconds
Add onions and cook until translucent, 2-3 minutes
Add garlic, parsley, and bay leaves and cook 1 minute
Add tomatoes, wine and stir well and lower heat to light simmer
Add mussels, stir and cover until mussels are all cooked (when they all open), approx 7-9 minutes.
Remove any unopened (dead) mussels before serving
Notes
Serve with bread & herb dipping sauce’
Serve with salad with balsamic or red wine vinegarette
Chorizo can be swapped out with bacon or pancetta
Red onion can be swapped with shallots
