Penne A La Vodka

Equipment
- 1 High heat resistant pan or skillet
Ingredients
- ¼ lb Panchetta
- ¼ cup Butter 1 stick
- ⅓ cup Vodka
- ½ cup Grated Parmesan Cheese
- 1 lb Penne
- 1 ½ cups Heavy Cream
- 1 ½ cups Tomato Puree
- 1 tsp Garlic cloves
- ½ each White Onion
- 2 tsp Italian Seasoning
Instructions
- In a large deep skillet or saucepan, melt butter. Sauté garlic/onions.
- When butter foams, add bacon, and spices. Cook 2 mins.
- Add vodka. Light vodka w/ match. Cook until all alcohol is gone, 5-10 mins
- Add tomato sauce & cream. Cook 8 mins.
- Add cheese gradually.
- Prepare pasta as per instructions on the box for al dente, minus 1 minute
- Drain pasta and combine with sauce
- Let pasta finish cooking in the sauce, 1-2 minutes
Notes
- Panchetta can be substituted with meaty bacon, bacon ends & pieces, or salt ham.
- Tomato puree can be substituted with a 28 oz can of crushed tomatoes
