Penne A La Vodka

Equipment

  • 1 High heat resistant pan or skillet

Ingredients
  

  • ¼ lb Panchetta
  • ¼ cup Butter 1 stick
  • cup Vodka
  • ½ cup Grated Parmesan Cheese
  • 1 lb Penne
  • 1 ½ cups Heavy Cream
  • 1 ½ cups Tomato Puree
  • 1 tsp Garlic cloves
  • ½ each White Onion
  • 2 tsp Italian Seasoning

Instructions
 

  • In a large deep skillet or saucepan, melt butter. Sauté garlic/onions.
  • When butter foams, add bacon, and spices. Cook 2 mins.
  • Add vodka. Light vodka w/ match. Cook until all alcohol is gone, 5-10 mins
  • Add tomato sauce & cream. Cook 8 mins.
  • Add cheese gradually.
  • Prepare pasta as per instructions on the box for al dente, minus 1 minute
  • Drain pasta and combine with sauce
  • Let pasta finish cooking in the sauce, 1-2 minutes

Notes

  • Panchetta can be substituted with meaty bacon, bacon ends & pieces, or salt ham. 
  • Tomato puree can be substituted with a 28 oz can of crushed tomatoes
