Ingredients
- 1 lb Fresh mussels cleaned and debearded
- ¼ cup Olive oil
- ¼ cup Chopped chorizo
- ½ cup Chopped red onion
- 3 each Garlic cloves minced
- ¼ cup chopped fresh parsley
- 1-2 each Bay Leaf
- 14 oz can crushed tomatoes
- 1 cup Red wine
- 1 tsp red pepper flakes
Instructions
- n a large pot, heat oil over med
- Add chorizo and cook until crisp, 3-5 minutes
- And chili flakes and cook for 30 seconds
- Add onions and cook until translucent, 2-3 minutes
- Add garlic, parsley, and bay leaves and cook 1 minute
- Add tomatoes, wine and stir well and lower heat to light simmer
- Add mussels, stir and cover until mussels are all cooked (when they all open), approx 7-9 minutes.
- Remove any unopened (dead) mussels before serving
Notes
- Serve with bread & herb dipping sauce’
- Serve with salad with balsamic or red wine vinegarette
- Chorizo can be swapped out with bacon or pancetta
- Red onion can be swapped with shallots
