In a large mixing bowl, combine 1 cup of the flour, yeast, sugar, salt, spices
Add olive oil and water and stir, mixing well
Slowly add the remaining pre-measured flour (NOT the extra) to the bowl, mixing and kneading as adding.
Mix until dough is cohesive, elastic, and pulls from the side of the bowl.
If needed, slowly add extra flour until it reaches this consistency. It should stop sticking to hand / separating from the rest of the dough
In another large bowl, lightly oil the sides of the bowl
Flour hands and roll dough into a large ball
Place the dough into the oiled bowl and roll around until coated with oil
Cover the bowl with plastic wrap and let the dough rest / rise for a minimum of 30 minutes
When ready, transfer the dough to a floured surface
Knead the dough 3-5 times and work into desired shape
